Polička is a town the size of Picton with one quaint brewpub with a history dating back to 1517 that provided strong inspiration in shaping Parsons Brewing. To pay homage to the age old tradition of a brewpub as a gathering place for their community to eat, drink and connect, we introduce Polička Czech Pilsner. Brewed with floor malted Czech barley, fermented low and slow and cold conditioned for six months this unfiltered Czech Pilsner is exceptionally smooth with the renowned balanced zestiness of Czech Saaz hops. Na zdraví!

Parsons Brewing's take on a classic unique style of beer "as old as man" - Belgian Lambic - technically it can't be referred to as Lambic since it is not from the Brussels area (like Champagne can't be called champagne unless it is made in Champagne, France or parmigiano in Italy). ... so we call it a barrel funked bottle conditioned ale.

The second release of our Two Left Feet series this Kriek contains a blend of 5yr and 2yr barrels aged on a copious amount of Montmorency cherries for six months bringing forth a vibrant acidity. Bottle conditioned and suitable for cellaring for years. The tart cherry intensity will moderate in time with the funky brettanomyces notes taking a more prominent role in this multi-level textured beer.

A deep chestnut brown ale topped by a near-white creamy head. Maris Otter and chocolate malt combined with English ale yeast lends this brew toasty toffee notes while the earthy floral attributes of Willamette, Fuggles & East Kent Golding hops make it a perfectly smooth brew.

In a nod to the Rickarton's Castle boathouse bar we brewed this malty red ale with a biscuity body and dry finish, carbonated with nitrogen for a frothy foamy head. The Rick was an epic venue for live music, cheap beer and a fair few fisticuffs. Shake, pour hard & enjoy!

We brew this beauty annually to suit the warm days and cool evenings of this time of year. The taste and texture of dried fruit - apricots & figs - feature strongly through a malty backbone and distinct fruity esters from @escarpmentlabs French Saison yeast, topped by a super dry finish.

A beer that brings to mind a favourite UK dessert while still following the German Reinheitsgebot beer purity law was a challenge. @Escarpmentlabs Uberweizen yeast providing the fruity banana esters and specialy malt lending this stout subtle toffee and distinct chocolate notes did the trick. Expect a full bodied mouthfeel, a dry chocolate finish and highly satsified tastebuds.

The Holy Ghost is a white stout with all the coffee and chocolate notes of a traditional stout without using dark roasted malts.
